I have probably mentioned before that I used to work in a supermarket deli and one of my first and most repeated jobs was putting on the fresh round of rotisserie chicken.
Yesterday I tried duplicating the process at home and the result was delicious!
I chose to make Lemon Pepper and the way I make Lemon Pepper Wings* involves melted butter as well, so I added Butter to my skillet before I put the chicken in. Halfway through cooking and again towards the end, I used a spoon (I guess you can use a baster) to ladle some of the butter over the chicken so that it kept it from getting dried out.
